How can I check the blower fan on my car?

The blower fan won’t work most of the time.Yesterday it came on but when I stopped for gas and turned the engine off , it would not work again. What do I check pleaseBy the way, when I hold my hand near the vents it feels lije cold air just not blowing.. I really need the air conditioner to work.

If you are making a rolled crust (such as a pate brisee, which is a very common type of dough used for pies), it is best to have all the ingredients super cold. Even the flour and sugar should be kept in the freezer until you’re ready to make your crust! This is because what makes the crust tender and flaky is the little bits of butter that are incorporated throughout. If the ingredients aren’t cold enough, the butter may start to melt as you handle the dough. There will be no more little bits of fat, and the liquid in the butter will bind with the flour, developing its gluten, which makes a crust tough.

The gluten thing is also the reason some people recommend hand-mixing. It’s easier to make sure you don’t overwork the dough, thereby developing the flour’s gluten, if you do it by hand. However, a food processor can be a great way to make the dough quickly and easily, and if you are careful to take the dough out just as it starts to come together, you should have a fine dough.

As you said, some crusts require rolling and others don’t. It just depends on the type of crust. A graham cracker crust uses melted butter and is simply pressed into the pan. But a flour-and-fat dough like the pate brisee is best rolled so that you can get a thin and even crust without overhandling the dough.
